Tteokbokki Without Gochujang: Soy, Cream, and Other Honest Pots

By Tteokbokki Curator

Three ways to cook rice cakes when you are out of gochujang — or do not want it — without pretending ketchup is the same paste.

TL;DR

No gochujang does not mean no tteokbokki family. Gungjung is the soy-sesame royal pot. Cream-garlic is a rice-cake skillet. A weeknight soy-ketchup pan is a stopgap, not a substitute paste. Each path is a different dish. The royal recipe is /recipes/gungjung-tteokbokki-royal-soy/.

“Tteokbokki recipe without gochujang” is a real grocery problem. The tub is empty, or someone at the table cannot eat fermented chili, or you want the older soy version on purpose. What this query should not become is a claim that ketchup plus chili powder equals gochujang. Those are different foods. This page gives you three honest pots and tells you which craving each one satisfies.

Path one: gungjung tteokbokki, the pre-chili palace plate. Soy, sesame oil, a little sugar, beef or mushrooms, vegetables in separate colors, and tteok glazed in a shallow stock. There is no red. There should not be a secret spoon of paste “for color.” The recipe is /recipes/gungjung-tteokbokki-royal-soy/. Cook it when you want savory and glossy, not hot. It is the ancestor, not a diet hack.

Method notes for the soy pot. Soak the cakes. Sear thin beef or king oyster strips and pull them. Stir-fry carrot, onion, and shiitake briefly so they stay distinct — the same color discipline japchae uses on https://japchae.ai/blog/royal-court-origin-joseon-banquet/. Return the protein with tteok and a cup of stock plus three tablespoons soy and a spoon of sugar. Toss until the liquid becomes a glaze, not a soup. Finish sesame oil and, if you have them, pine nuts. That is dinner.

Path two: cream-garlic tteok, sometimes sold as cream tteokbokki. No gochujang, no gochugaru. Butter, garlic, mushrooms, stock, cream, pepper, maybe peas. It eats like gnocchi that happens to be rice cake. Kids who reject red pots often like this first. It is not “authentic street tteokbokki” and you should not file it under schoolfront. It is a valid skillet. If you add gochujang back into this pot you have made rose — /blog/rose-tteokbokki-recipe/ — which is a fourth path, not this one.

Path three: the weeknight stopgap. You have soy, ketchup or a little tomato paste, sugar, and maybe paprika. You can make a sweet-savory pan that will feed people. Call it what it is: a pantry tteok skillet. Do not write “traditional” on the leftover container. Use it when the store is closed. Then buy a tub using https://kimchee.ai/blog/gochujang-gochugaru-buying-guide/ and cook /recipes/classic-school-tteokbokki/ later in the week.

What about gochugaru only, no paste? A pot seasoned with flakes, soy, and syrup can be tasty and red-ish. It will miss the fermented sweetness that gochujang brings. Bloom a small amount of flakes in oil or stock so they do not taste dusty. This is closer to a homemade mash-up than to either gungjung or schoolfront. Fine for Tuesday. Not the answer if the searcher wanted royal soy.

Allergy and preference, separated. No gochujang because of chili is not the same as no gochujang because the tub ran out. For chili-free, gungjung or cream-garlic are the paths. For empty-tub, any of the three. Wheat in the cakes is a separate issue — /blog/wheat-vs-rice-tteok-for-tteokbokki/. Soy sauce gluten is a third. Do not collapse them into one “without”.

Sides still matter when the pot is not red. Pickles, a fried egg, and rice turn gungjung into a meal. A grill plate from https://bulgogi.ai/recipes/seoul-style-so-bulgogi/ next to soy tteokbokki is a banquet leftover logic, not a fusion stunt. Dongchimi is less necessary when there is no capsaicin to put out, but it still belongs if you have a jar: https://kimchee.ai/blog/dongchimi-step-by-step/.

Restaurants and carts will not always say “gungjung” on an English menu. You may see “soy tteokbokki,” “royal,” or “non-spicy.” Ask whether there is chili paste in the sauce if you need a true zero. Home cooking is easier: you control the spoon.

This post exists because the “without gochujang” query deserves a fork in the road, not a single fake substitute.

Cook the soy pot once with beef or mushrooms, the cream pot once if that is your household, and keep a note of which one you actually repeat. Repeating is the ranking that matters. We will not invent a popularity percentage.

If you came here from a kid-heat search, also read /blog/tteokbokki-for-kids-heat-scaling/ — that page assumes you still have gochujang and want to dial it. This page assumes the paste is gone or unwanted. Different problem, different pot.

Shopping when the tub is empty. A Korean grocer will have gochujang near the doenjang and ssamjang. A large US supermarket often has at least one sweet-hot tub in the “international” aisle. If you are already in the store for dinner tonight and there is no paste, cook the soy pot or the cream-garlic skillet and put the tub on the list for later. Do not buy a squeeze pouch of generic “chili sauce” and expect the same fermented sweetness. That is a different condiment.

Gungjung color discipline is worth one extra minute. The palace plate is supposed to show distinct vegetables — carrot, cucumber or zucchini, mushroom, maybe egg strip — not a brown stir-fry. Cook the vegetables separately or in a wide pan so they stay themselves, then glaze with the tteok at the end. If everything is the same tan, you crowded the pan. The japchae color essay on https://japchae.ai/blog/royal-court-origin-joseon-banquet/ is the same idea in noodles.

When someone at the table cannot eat chili at all, say so before you start the schoolfront recipe and then “leave the paste out.” Leaving the paste out of a gochujang recipe leaves a thin, sweet stock with no body. Cook gungjung or cream-garlic as their own dishes. The cakes, the soak, and the stock still matter. The seasoning is a different recipe, not a deleted line.
