Leftover Tteokbokki Skillet — Pan-Fry So the Cakes Wake Up

By Tteokbokki Curator

What to do with leftover tteokbokki: a hot skillet, a spoon of water, and an egg. Do not microwave a brick of set starch and call it dinner.

TL;DR

Cold leftover tteokbokki is supposed to be firm. Slice if stuck, fry in a slick of oil with 2–3 Tbsp water or stock, toss until the sauce loosens and the cakes blister. Egg and scallion at the end. Longer reuse guide: /blog/leftover-tteokbokki/.

Prep 5 minCook 8 minServes 1–2

Ingredients

  • 2–3 cups leftover tteokbokki (cakes plus sauce), cold from the fridge
  • 1 tsp neutral oil or a dab of butter
  • 2–3 Tbsp water or leftover stock
  • 1 egg (optional)
  • Scallion, sesame, shredded mozzarella (optional)
  • A scoop of leftover rice if you want deopbap

Steps

  1. If the leftover is one glued block, cut it into chunks. Do not try to pry individual cakes apart in the fridge — you will tear them.
  2. Heat a skillet until a drop of water skips. Add oil, then the leftover. Let one side blister 60–90 seconds before you stir.
  3. Add water or stock around the edge, not on top of the cakes. Toss as the sauce loosens. If it still looks like paste, another spoon of water — not more gochujang.
  4. Crack an egg into a well, scramble softly, or leave it sunny. Cheese only off heat.
  5. For deopbap, spoon the skillet over hot rice. For a second-day lunch, pack rice and skillet separately and combine at the table.

Tips

  • Rose and cream leftovers split if you boil them. Low heat, splash of stock, stop.
  • Uncooked freezer kits are a different prep — /blog/make-ahead-freezer-tteokbokki-meal-prep/.
