Tteokbokki Stock Recipe — Anchovy, Kelp, and Fish Cake Broth
By Tteokbokki Curator
How to make the anchovy-kelp stock behind good tteokbokki — and the eomuk broth you sip between spicy bites.

TL;DR
Water makes tteokbokki taste like spicy ketchup; stock makes it taste like cooking. Simmer gutted dried anchovies, kelp, and shiitake 15 minutes at a lazy bubble. Pull kelp before a hard boil. Freeze 500 ml portions. The soup plate is /recipes/eomuk-guk-with-tteok/.
Water makes tteokbokki taste like spicy ketchup; stock makes it taste like cooking. The classic base simmers 10g dried anchovies (gut removed), one 10 cm square of kelp, a few dried shiitake, and optionally radish scraps for 15 minutes at a lazy bubble — not a hard boil that clouds and turns bitter.
Remove kelp before boil and anchovies at 15 minutes; kelp that boils goes slimy and metallic, and anchovies that over-steep go fishy. Strain, taste, and salt lightly before you add gochujang — the paste brings its own salt and you will correct after.
Shiitake adds guanylate (mushroom umami) that pairs with anchovy inosinate for a synergistic savory lift — the same reason dashi uses katsuobushi plus kombu. If vegetarian, swap anchovies for more shiitake and add a pinch of MSG or mushroom powder directly.
Radish or onion scraps add clarity and faint sweetness, but keep them out of a light stock if you want a purely anchovy-forward profile for rabokki where ramyun will add its own flavors later. Match stock tone to final add-ins.
Batch freeze stock in 500 ml portions. Having tteokbokki stock ready turns a 30-minute scratch into a 12-minute weeknight cook and is the single most effective prep to keep tteokbokki from devolving into jar-plus-water.
